Apple Cake
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoon vanilla
- 1/2 cup currants (optional)
- 3 cups chopped fresh apples
- Frosting:
- 1/2 cup butter
- 1/3 cup milk
- 1 cup firmly packed brown sugar.
- Mix together and bring to a boil. Boil slowly for 3-4 minutes.
- Beat eggs, oil and sugar until mixed. Sift flour, soda, and salt stir into the eggs, oil and sugar. Add vanilla, currants, and apples, stir until blended. The batter is very stiff. Spread into a greased 9 X 13 baking dish. Bake at 325 degrees for 60-70 minutes. While the cake is hot poke holes with a large kitchen fork and pour frosting slowly over entire cake. After the cake is cool keep in the fridge.
