Southwest Chipotle Burgers
- 3/4 lb. ground beef 85% lean
- 3/4 lb. ground pork
- 2 chopped chipotles (canned)
- 1 egg
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp brown sugar
- 1 tsp adobo sauce
- 1/2 tsp ground cumin
- salt & pepper to taste
- 4 slices chihuahua cheese
- 4 kaiser buns
- Prepare medium hot fire for direct grilling.
- In a large bowl combine beef, pork, chipotles, egg, cilantro, brown sugar, adobo sauce, cumin, salt & pepper. Mix gently & shape into four patties. Place patties on prepared grill, cook 5 minutes per side, top each burger witth cheese, place buns cut side down on outer edge of grill to toast, about 2 minutes. To serve spread cut sides of buns with chipotle mayonnaise (see note). Top burgers with lettuce, tomato, avacado or onion if desired.

- 1 tsp adobo sauce(from canned chipotles)
