Jen'S Brew(King Ranch Chicken)
- 5 boneless chicken breasts or more
- 1 large onion
- 1 green bell pepper
- 1 can mushroom soup
- 1 can Ro-Tel
- 1 can cream of chicken soup
- 1/2 c. grated cheese
- 1 1/2 tsp. chili powder
- 1 1/2 tsp. garlic powder
- 1 pkg. corn tortillas
- Boil chicken.
- In skillet, saute onion and pepper until clear, then add soups (mushroom, Ro-Tel and cream of chicken).
- Chop chicken; put in soup mixture.
- Dip 6 or more tortillas in chicken broth.
- Spray pan with Pam, then pour 1/2 of chicken mixture in pan.
- Spread some cheese.
- Add the tortillas that have been dipped in chicken broth to cover.
- Add rest of mixture.
- Add chili and garlic powder.
- Add rest of cheese.
- Bake for approximately 5 to 15 minutes.
