Stuffed Jalapenos, Fried In Beer Batter
- 1/2 lb. ground beef
- 3 Tbsp. minced onion
- 1 tsp. garlic salt
- 1/4 tsp. pepper
- 1 tsp. chili powder
- 1/8 tsp. paprika
- 1/4 tsp. ground cumin
- 1/4 c. water
- 1 c. cooked rice
- 1/3 c. shredded Cheddar cheese
- 20 large fresh jalapenos
- In
- a
- small
- saucepan,
- brown ground beef, stirring to crumble real small.
- Add onion, seasonings and water; bring to a boil.
- Cover; lower heat and simmer 10 minutes.
- Remove from heat and
- stir
- in rice and cheese; mix well.
- Leave stems on peppers and make a small slit at top of pepper and down side. Remove seeds and stuff with rice mixture.
- Dip in beer batter and deep fry until golden brown.
- Drain on paper towels.
