Sweet Potato Cakes
- 4 sweet potatoes
- 1/2 sleeve of Ritz crackers
- 1 package of chicken breasts
- 1 slice of ham-steak
- 1 white onion
- Garlic (to taste)
- Dill (to taste)
- Breadcrumbs
- 1 bottle of raspberry vinaigrette
- Skin and boil sweet potatoes, when done drain, mash, add Ritz crackers and then set aside. Dice ham-steak and chop chicken, garlic and onion and fry in olive oil, sprinkle with dill and salt and pepper to taste. When chicken mixture is done combine with potatoes. Stir together and let cool. Then create small patties with the potato-chicken mix and dredge in breadcrumbs. Fry patties until golden brown on both sides in olive oil on med-high heat. While hot, drizzle raspberry vinaigrette on top of the patty.
