Chicken Italian Style
- 1 carrot, sliced thin
- 1 clove garlic, smashed
- 1 onion, sliced thin
- 1 can tomato paste
- 1 Tbsp. sugar
- 8 tomatoes, cored and sliced
- salt and pepper
- basil, crushed
- oil
- 3 oz. white wine
- 1 large breast of chicken, pounded
- 1 egg
- 1 Tbsp. oil
- salt and pepper
- flour
- bread crumbs
- oil (small amount to brown chicken)
- mushrooms
- lemon (optional)
- Parmesan cheese
- Mozzarella cheese, sliced
- Add salt, pepper and Parmesan cheese to chicken.
- Mix egg and 1 tablespoon oil together.
- Dip chicken into egg, then flour and bread crumbs.
- Put into pan with oil and brown.
- Add mushrooms and sauce and lemon (optional).
- Before serving, add Mozzarella cheese.
