Steak Sauce (Sun-Dried Tomato, Wild Mushroom And Bourbon Sauce)
- 1 cup quartered fresh shiitake or other wild mushrooms(available at specialty food shops and some supermarkets)
- 1 tablespoon minced shallot
- 2 tablespoons unsalted butter
- 1 cup beef broth
- 3 tablespoons chopped sun-dried tomatoes, blanched and drained
- 2 cups heavy cream
- 1/4 bourbon
- 1 tablespoon chopped fresh parsley
- In a skillet cook the mushrooms and the shallot in the butter over moderately low heat, stirring, until the shallot is softened, add the broth, and boil the mixture until the liquid is reduced by half. Add the tomatoes, the cream, the bourbon, and the parsley, simmer the sauce, stirring occasionally, for 15-20 minutes, or until it is thickened, add salt and pepper to taste.
