Kahlua Mousse

  1. Beat egg yolks and 2 tablespoons Kahlua in the top of a double boiler.
  2. Beat in 1/4 cup sugar; beat until slightly thickened and color lightens.
  3. Place pan over boiling water.
  4. Cook and stir until thickened, about 10 minutes.
  5. Set top of double boiler in a bowl of cold water.
  6. beat until mixture is thick, 3 to 4 minutes. Melt chocolate and butter together.
  7. Stir in remaining 2 tablespoons Kahlua.
  8. Add to egg mixture.
  9. Beat egg whites until soft peaks form.
  10. Add remaining sugar.
  11. Beat until stiff peaks form.
  12. Add to chocolate mixture.
  13. Beat whipping cream until stiff. Fold into chocolate mixture.
  14. Spoon mousse into parfait glasses or dessert cups. Chill 3 hours before serving.
