Strawberry Banana Muffins
- 1 c whole wheat flour
- 1/4 c all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 c Splenda brown sugar mix (packed)
- 1/4 c vegetable oil
- 2 egg whites
- 1 tsp vanilla
- 1 c mashed banana
- 1 c mashed strawberries
- 4-5 strawberries, diced
- Mix both flours, baking soda, baking powder, salt, and cinnamon in a small bowl.
- In another bowl, mix sugar, oil, egg whites, and vanilla until well mixed. Add in mashed bananas and strawberries.
- Add flour mixture until combined. Gently fold in diced strawberries.
- Spray cupcake pan with nonstick spray. Pour batter evenly into cupcakes.
- Bake at 350 for 20 minutes.
