Cioppino (Seafood Stew, From Mario Batali)
- 3 celery stalks, chopped
- 2 large carrots, chopped
- 1 large onon, chopped
- salt and pepper
- 3 cloves garlic, chopped
- 2 bay leaves
- 3/4 jar passata tomato puree
- 1 can diced tomatoes
- 1 c. white wine
- 2 lb. clams
- 1 lb. shrimp
- 1 1/2 lb. cod
- 2 lb. mussels
- chili flakes
- chopped parsley
- Saute first five ingreedients for 15 minutes.
- Add passata, tomatoes and wine and simmer 20 minutes.
- Add clams and simmer 3 -4 minutes.
- Add remaining seafood plus pinch of chili flakes, then simmer for 5 - 6 minutes more.
- Top with chopped parsley.
