Super Easy Pepper Steak

  1. Cut beef in thin strips 1/8-inch thick.
  2. Combine soy sauce, garlic and ginger.
  3. Add beef.
  4. Toss and set aside.
  5. While you prepare vegetables, heat oil in large frying pan; add beef and toss over high heat until brown.
  6. Cover; simmer 30 to 40 minutes, until tender, over low heat.
  7. Turn heat up and add vegetables (not tomatoes).
  8. Toss until tender (10 minutes).
  9. Mix cornstarch with cold water; add to meat and vegetable mixture.
  10. Stir and cook until thickened.
  11. Add tomatoes until they are hot clear through. Serve over white rice.
