Ground Beef Gumbo
- 2 lb. ground beef
- 2/3 c. each, chopped: onion, celery and green pepper
- 2 cloves garlic, minced
- 1 (15 oz.) can tomatoes
- 1 (15 oz.) can tomato sauce
- 2 (6 oz.) cans tomato paste
- 1 (6 oz.) jar sliced mushrooms
- 3 c. frozen okra (cut)
- 2 1/2 tsp. Italian seasoning
- 2 bay leaves
- 1 1/2 Tbsp. parsley flakes
- 1 1/2 tsp. dried basil
- 1 tsp. each: oregano, chili powder and onion powder
- 1/2 tsp. cumin powder
- salt and pepper
- 1/2 c. water
- Cook beef, onion, celery, green pepper and garlic in heavy Dutch oven until meat is brown; drain.
- Stir in remaining ingredients.
- Simmer, uncovered, for 1 hour. Remove bay leaves. Serve over hot rice.
- Makes 1 1/2 quarts gumbo.
