Crockpot Southwest Chicken
- 4 chicken thighs with skin on
- 1 pkg taco seasoning mix.
- 1/2 cup chopped onion
- 1 14 oz can diced tomatoes w/green chilies
- 1 cup chicken stock.
- 1/2 cup diced green bell pepper
- 1/3 cup frozen corn kernals
- 6 oz colby/jack cheese grated.
- Mix all ingredients except chicken and cheese. Pour into crockpot.
- Place chicken pieces on top.
- Season chicken with salt and pepper and 1/4 tsp each cumin seeds and chili powder.
- Cover and cook on low 8 hours
- Remove chicken from crockpot and place in preheated 200 degree oven on foil. Sprinkle each piece with 3-4 tbs grated colby/jack cheese. warm until chesse melts.
- Drain veggies from crockpot.
- Discard liquid.
- Serve chicken with veggies on side. Top chicken with dollop of sourcream.
