Buffa-Gerz
- 1 lb ground bison sirloin
- 1/4 large yellow onion
- 1/4 cup steel cut oats
- 1 large egg
- 2 tbsp barbecue sauce
- pepper to taste
- 1. Dice the onion.
- 2. In a large bowl combine the bison, diced onion, oats, egg, and barbecue sauce. Mix well.
- 3. Preheat a frying pan or griddle to medium-high heat.
- 4. Use clean hands to form the mixture into four patties.
- 5. Place the patties in the pan and cover with a lid. Cook for approximately 6 minutes.
- 6. Turn the patties over and re-cover. Cook for another 4 to 5 minutes.
- 7. Keep extras in the refrigerator although reheating is not recommended. Instead, consider freezing uncooked patties in individual sandwich bags and cooking on demand.
- Note: These suggested cooking times should produce a patty that is done "medium." This is the ideal preparation for bison as it is a bit more dry and lean than beef.
