Faggots
- 3/4 lb. pigs liver
- 3/4 lb. streaky bacon
- 1 large onion, finely chopped
- 1/2 lb. stale bread (crumbs)
- fresh sage (chopped) or dried sage
- 1 level tsp. dried mixed herbs
- 2 eggs, beaten
- 1.2 lb. oatmeal
- milk
- salt and pepper
- 1 oz. flour
- 1. Wash and mince the meat.
- You can choose how coarse to do this.
- 2. Add the onion, breadcrumbs, oatmeal, herbs, and eggs. Add seasoning, but not too much salt as the bacon will have its own salt.
- 3. Mix well together to give a moist mixture. shape into small balls (if necessary, add a bit of milk to give the desired consistency).
- 4.Place the faggots into a well greased ovenproof dish and cover with foil. Cook in a moderate oven (350F) for 40 minutes. Remove the foil and cook for another 10 minutes to brown the faggots.
- 5. Mix the flour with a little cold water and make a gravy with the juices.
- 6.The traditional serving for faggots is hot with peas, but they go well with other vegetables and french fries.
