Picnic Cookies

  1. Cream sugar and butter until light and fluffy in an electric mixer. Beat in egg, scraping bowl, until well combined. Beat in remaining ingredients, scraping bowl, until well-combined. Divide in half and shape each half into a cylinder about 2 inches in diameter. Wrap in plastic wrap and then place into freezer bag and refrigerate or freeze until firm enough to slice, about 30-45 minutes. Preheat oven to 350. Slice cookies about 1/2 inch thick and set about 1 inch apart on parchment lined baking sheets. Bake cookies for 10-12 minutes. Cool cookies on cooling racks and store in airtight container.
