Easy Potato And Carrot And Zucchini
- 2 c. grated zucchini
- 1/2 tsp. salt
- 1 c. chopped onion
- 2 to 3 tbsp. olive oil
- 1 tsp. chopped garlic
- 2 c. grated potatoes
- 1 c. grated carrots
- 3 tbsp. chopped basil
- 2 tbsp. chopped chives
- 1 tbsp. grated Parmesan cheese
- 1/2 c. light cream
- Combine the zucchini with the salt in a large mixing bowl. Let set for 15 minutes.
- Meanwhile heat the olive oil and saute the onion and garlic for 5 minutes stirring occasionally. Place half the onions and a coating of oil in a 9 inch pie plate. Squeeze the zucchini dry and combine with the potatoes, carrots, basil, chives and cheese. Put this mixture into pie plate and top with the remaining onions and garlic.
- Bake in 400 degree oven for 30 minutes. Pour the cream over, low heat to 350 degrees and cook for 20 to 30 minutes until lightly browned on top. Cut in wedges to serve. Serves 6.
