Mushroom Rice W/ Tumeric
- 3/4 pound mushroom, cubed
- 4 tablespoons butter
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon tumeric
- 1 cup rice
- 1 piece bay leaf
- 1 1/4 cups chicken broth
- Preheat oven to 400 degrees.
- Wash, trim, and cube mushrooms---should be about 2 cups.
- Heat 1/2 butter in ovenproof pan with tight fitting lid.
- Add onion and garlic.
- Saute several minutes then add mushrooms.
- Cook about 5 minutes, stirring often.
- Sprinkle with tumeric and add rice and bay leaf.
- Stir until rice is coated with butter.
- Add broth, salt, and pepper.
- Cover and bring to boil on top of stove.
- Place in 400 degree oven and bake for 20 minutes.
- Remove and stir in remaining butter.
