Pop-Pop'S Outstanding Baked Beans
- 5 (16 oz.) cans Progresso cannellini beans (white kidney beans)
- 3/4 to 1 lb. bacon slices
- 2 large onions, peeled and chopped
- salt, pepper, onion powder, garlic powder to taste (depending upon how much bacon you use, you have to adjust the salt seasoning)
- Place beans in a 3-quart casserole (round, oblong, glass or disposable aluminum, whatever, just as long as it's ovenproof). Cook bacon slices in frying pan until crisp.
- Drain on paper towels. Break into nice size bits and pieces.
- Discard 1/2 the bacon drippings.
- Pour remaining drippings into the casserole. Add the rest of the ingredients.
- Stir until blended with a wooden spoon.
- Bake, uncovered, 30 to 45 minutes, until it's heated through. If you like a nice crust over the beans, don't stir them. If you like your beans without a crust, stir them once or twice during cooking time.
