Best Chicken Quesadillas
- 8 fajita sized flour tortillas
- 1 cup shredded cheddar
- 1 cup shredded pepper jack
- 12 pieces of chopped, fully cooked bacon
- 2-3 skinless, boneless chicken breasts
- 1 packet of taco seasoning
- 3 green onion stalks
- 8 ounces of sour cream
- Preheat oven to 400 degrees
- Remove fat,clean chicken, put in baking pan lined with foil, sprinkle taco seasoning onto chicken (half the packet is plenty).Bake for 35-40 minutes. Cut Chicken into small bite sized pieces. Lay four tortillas flat on cookie sheet or similar, sprinkle liberally with cheese, bacon and chicken.
- Bake at 400 degrees for approx 10 minutes, turning halfway or until crispy on edges.
- Use a pizza cutter to cut into desired sized slices. Serve with a dollop of sour cream covered with diced green onions.
