Maple-Mustard Glazed Salmon
- 4 (6 ounce) salmon fillets
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon country style dijon mustard
- 2 tablespoons maple syrup
- 2 teaspoons balsamic vinegar
- Pre heat broiler. Line the broiler pan with foil and coat the foil with cooking spray.
- Sprinkle the salmon with the salt and pepper and place skin side down on the prepared pan. Broil the fish for 4 minutes, turn and broil another 4 minutes.
- Mean while, in a small bowl whisk together the mustard, maple syrup and vinegar.
- Tun the salmon again so it's skin side down and brush the surface liberally with the maple syrup mixture. Broil another 2 minutes or until the top is golden and bubbly, and the fish is cooked to the desired degree of doneness.
