Seafood Gumbo
- Roux:
- 2/3 cup flour
- 2/3 cup olive oil
- Soup:
- 2 cups onion chopped
- 1 cup celery chopped
- 1 green pepper,sliced(take out at end)
- 1/2 cup green onion tops dash of File'
- 4 cloves garlic, minced
- 1 1/2 quart(6 cups) chicken stock
- 24 oz V-8 juice
- dash of Tabasco
- 2 pounds shrimp
- 1 pound crab meat
- Roux
- add flour and olive oil in a 4 cup dish
- Microwave on high for 6-7 minutes
- add chopped onion, chopped celery, green pepper slices
- saute on high for 3 minutes stirring
- Turn to low and add
- Green onion tops, file', garlic,chicken stock, V-8 Juice and Tabasco-Simmer for 30 minutes. add shrimp and crab meat cook until shrimp is pink.
- If freezing do not add shellfish
