Meatballs - Not The Way My Mom Made Them
- 1 package ground turkey (at least 1 pound)
- 3 slices day old bread preferably whole wheat (or 1 cup breadcrumbs)
- skimmed milk
- 1 egg
- 7 or 8 leaves fresh basil (Pull the basil leaves by had into pieces. The pieces shouldn't be to small. Each leaf could be about 4 pieces.)
- 1/4 cup fresh parsley chopped
- 2 cloves garlic chopped
- 1/4 cup grated parmesan cheese
- freshly ground black pepper
- salt
- cooking spray
- all ingredients are subject to the tastes and likes of the chef
- Put bread in a large bowl and add enough milk so that the bread becomes soft but not mushy.
- Add the egg, parsley, garlic, cheese, salt and pepper. Mix by hand until combined. Add turkey and mix by hand until all of the turkey is combined with all of the bread mixture.
- Preheat oven to 350.
- Take a small handful of meat mixture and form into a ball. Spray a shallow baking pan with cooking spray. Place on shallow baking pan. Due this until all of the meat is used.
- Spray the top of the meatballs with the cooking spray.
- Place pan in center of oven and cook for about 15 minutes. Turn the meatballs and cook on the other side for about 10 minutes or until done.
