Achaari Alu
- 10 medium potatoes, peeled and diced
- 2 medium onions, finely minced
- 4 tsp ginger-garlic paste (if you want to make it-chop equal amts of ginger and garlic)
- 1 tsp turmeric powder
- 1 tsp chili powder
- 4 tsp sugar
- 11/3 cups water
- 6 Tbs lemon juice
- 8 dried red chilies
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp Nigella black onion seeds (optional)
- Salt to taste
- Fry the potatoes until tender.
- Remove from the pan.
- Fry the onion until golden.
- Add the ginger garlic paste.
- Add the turmeric, the water, and lemon juice.
- Add the chili powder salt and sugar and lLet it cook for a couple seconds then add the potatoes back in.
- Let the potatoes absorb the water and get a little dry then remove from the fire.
- In a separate pan, heat the oil.
- Add the mustard seeds, cumin seeds and Nigella seeds.
- Add the red chilies unbroken.
- When the mustard seeds sputter, immediately pour over the potatoes.
- Mix and serve.
