Chocolate Peanut Butter Pie
- 1 9 in Pie Crust
- 8 Oz Cool Whip
- 1 1/2 Cup Sugar
- 2 Tbsp Cocoa Powder
- 1/2 Cup Flour
- 2 Cups Milk
- 4 Tbsp Tapioca
- 2 Egg Yolks
- 4 Tbsp Corn Starch (optional)
- 2 Oz. Bittersweet Chocolate Square
- 2 Tbsp Butter
- 2 Tsp Vanilla
- 1/2 Cup Peanut Butter
- 4 Tbsp Powdered Sugar
- Chocolate Sauce for Garnish
- *If you are using a frozen pie crust or are making it yourself, make this while you make the filling*
- 1.) Mix sugar, cocoa powder, flour, milk, and tapioca over medium heat in a medium size saucepan. Whisk constantly until it feels slightly thickened, about 2-3 minutes.
- 2.) Add the egg yolk, chocolate, butter, and vanilla and whisk for about 5 minutes. If the mixture is not yet thickened, add the corn starch.
- 3.) Remove from heat. Add the peanut butter and powdered sugar.
- 4.) Let chocolate mixture cool. Take out cool whip and let thaw so it will easily spread.
- 5.) Pour cooled chocolate mixture into the bottom of the pie crust. Top with a layer of cool whip.
- 6.) Garnish with lines of chocolate sauce.
- 7.) Store in fridge until ready to serve.
