Easy Apricot Pound Cake
- 1 16 ounce box pound cake mix
- 2 large eggs
- 1/2 cup orange juice
- 1/4 cup water
- 2/3 cup chopped, dried apricots
- 1/3 cup chopped toasted almonds
- Glaze:
- 1 1/2 tablespoons butter or margarine
- 1 teaspoon orange extract
- 1 1/3 cups powdered sugar
- 1-2 tablespoons orange juice
- Preheat oven to 350 degrees. Grease & lightly flour a 9x5-inch loaf pan.
- In a large mixing bowl, combine cake mix, eggs, orange juice & water. Best 30 seconds on low speed. Increase speed to medium; beat 3 minutes. Stir in apricots & almonds. Pour into prepared pan. Bake 45-55 minutes or until a wooden toothpick inserted near center of cake comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan; cool completely. To prepare glaze, stir all ingredients together in a medium bowl. Spread on top of cooled cake, allowing some of the glaze to drip down sides. Slice.
