Shrimp With Lemon, Spinach And Penne
- 2-3 Garlic cloves, chopped
- 1/4 cup white wine
- 1/4 cup Fresh squeezed Lemon Juice, divided
- 1 cup tomatoes, seeded and diced
- 6 cups fresh Spinach
- 1/2 teaspoon grated lemon peel
- 1 lb. medium shrimp, pre cooked
- 1/2 cup shredded basil, divided
- 1 tablespoon olive oil
- salt and pepper
- 1lb penne pasta
- In a large saucepan, heat olive oil over medium high heat and saute garlic until soft.
- Meanwhile, cook pasta according to package directions to achieve al dente texture
- To the sauted garlic,add shrimp, white wine and 2 tablespoons of lemon juice. Cook until shrimp is heated through.
- Add cooked pasta, tomatoes, lemon peel, spinach, 1/4 cup basil and remaining lemon juice to the saucepan. Stir until spinach is wilted, use low heat if necessary. Season with salt and pepper Serve with remaining basil.
