Blackened Pork Chops With Apples
- 4 1-inch Boneless (center cut)Pork Chops
- Blackening (Cajun) seasoning
- 1 large onion (thinly sliced)
- 2 Tbs. Margarine
- 1-2 Granny Smith Apples (cored, peeled, thinly sliced and quartered)
- 1/4 Cup Golden Raisins
- 2 Tbs Brown Sugar
- 1/4 - 1/2 Cup Apple juice/cider
- Dash of Cinnamon
- Melt margarine in saute/fry pan. Add thinly sliced onions and cook on low heat to let carmelize.
- Pat boneless pork dry and dredge in cajun seasoning. Heat skillet till very hot (smoking) and add pork. Let pork blacken for about 5-7 minutes on each side. Remove from heat. Pork should be slightly pink in center.
- Once the onlions are soft and translucent, add apple slices ,raisins, brown sugar, cinnamon and apple juice. Continue cooking on a higher heat until apples are soft and most of the liquid has cooked off. Serve the apple mixture alongside the pork
