Honey Vinegar Cauliflower
- 2 Tbsp Butter
- 1 Red Onion, sliced
- 1 Clove Garlic, minced
- 2 Tbsp Ginger, minced
- 1 Large Cauliflower
- 1 Large or 2 Small Carrots, shredded
- 1 Cup Parsley, roughly chopped
- 2 Tbsp Olive Oil
- 1 Tbsp Vinegar
- 1 Tbsp Honey
- Salt and Pepper to taste
- Melt butter in frying pan over medium heat. Add garlic, onions, and ginger. Saute. Add cauliflower. Cover, stirring occasionally, until cauliflower softens slightly. Add carrots. Cover for a few minutes until onions and cauliflower caramelize on the bottom of the pan. Add in parsley when cauliflower is just about done and stir a few times.
- To make the dressing, combine olive oil, vinegar, honey salt and pepper. Either combine with cauliflower at once or by serving.
