Chipotle Sweet Potato Bowl
- 1 Tbsp Olive Oil
- 1 Medium Yellow Onion, chopped
- 2+ Garlic Cloves (per taste)
- 1 1/2 lbs Sweet Potato, peeledd and cut into 1/2" chunks
- 1 - 14.5 oz can of Crushed Tomatoes
- 1 - 15.5 oz can of Dark Red Kidney Beans, thouroughly rinsed.
- 1 - C of Water
- Chipotle Chilies in Adoboe Sauce (to taste)
- A bit of Salt (to taste)
- In over Medium heat a large pot, sautee the onion, pepper, and garlic in a large pot. Cook until tender (5 mins).
- Add Sweet Potatoes and stir.
- Keep over heat for about 10 minutes with intermittent stirring.
- Add tomatoes, beans, and water.
- After potatoes are tender, salt to taste.
- Cover and cook for at least 1 hour.
- Try serving with Sour Cream, Rice, and Cheese
