Italian Soupa
- 3/4 to 1 lb. hot sausage, sliced in 1/2-inch pieces
- 3/4 to 1 lb. mild sausage, sliced in 1/2-inch pieces
- 2 green peppers, chopped
- 1 medium onion, chopped
- 1 3/4 c. cooking wine
- 4 c. beef broth
- 1 bay leaf
- 1 clove garlic, minced
- 1 tsp. basil
- 2 Tbsp. parsley
- 1 tsp. oregano
- 1 qt. jar tomatoes
- 8 oz. bow tie noodles
- Parmesan cheese
- Saute sausage.
- Remove excess drippings and sausage.
- Fry green peppers and onion.
- Add sausage, wine and broth.
- Boil until wine smell is gone (about 15 minutes).
- Add seasonings, tomatoes and dry noodles.
- Simmer 1 hour.
- Sprinkle with Parmesan cheese before serving.
- Serves 8.
