Crunchy Cranberry Broccoli Salad
- Salad
- 1 1/4 cup fresh cranberries, chopped
- 1/4 cup sugar
- 4 cup broccoli florets
- 4 cup packaged shredded cabbage with carrot (coleslaw mix works well)
- 1/2 cup chopped pecans or walnuts
- 1/2 cup raisins
- 1/3 cup chopped red onion
- 6 slices bacon, crip cooked, drained
- Dressing
- 1 cup mayonnaise
- 1/4 cup sugar
- 1 Tablespoon vinegar
- First make the berry mixture.
- In a small bowl, combine the chopped berries and 1/4 cup sugar. Chill mixture until serving time.
- Make the dressing.
- In small bowl, combine the mayonnaise, 1/4 cup sugar and 1 tablespoon vinegar
- Make the salad
- Combine the broccoli florets, the shredded cabbage/carrot mixture, the nuts, the raisins, and the onion. Drizzle the dressing over the salad and toss. Chill salad from 1 to 24 hours. Just before serving, gently fold in the cranberry mixture and the crisp bacon.
