Cream Whiting
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1/2 cup cream
- salt and pepper to taste
- 1/4 teaspoon nutmeg
- 1/2 pound fresh spinach, cooked, drained and chopped
- 1/2 cup grated parmesan cheese
- 1 tablespoon butter for the topping
- Melt butter in saucepan. Add flour and stir with wire whisk until blended. In another pan, heat mike and cream until boiling and add all at once to butter and flour mixture, stirring until smooth. Season with, salt, pepper and nutmeg. Put spinach in the empty pot and add 1/2 cup of the sauce. Heat thoroughly, but do not boil. Spoon onto a heat-proof platter and arrange fish on top. Stir half of the cheese into the remaining sauce and spoon over the fillets. Sprinkle with leftover cheese. Dot with butter. Bake for 10 minutes or until heated through.
