Tangy Lemon Squares
- 1 cup butter or margarine -- softened
- 1/2 cup powdered sugar
- 2-1/3 cups flour
- 4 each eggs
- 2 cups granulated sugar
- 1/3 cup lemon juice
- 1 teaspoon baking powder
- confectioner's sugar
- Grease 9x13-inch pan well. Preheat oven to 350*F.
- Cream butter and powdered sugar until fluffy. Add 2 cups flour, beating until blended. Spread evenly over the bottom of the prepared pan. Bake for 20 minutes.
- Meanwhile, in a small mixing bowl, beat the eggs until light and foamy.
- Gradually add granulated sugar, beating until thick and blended. Add lemon juice, remaining 1/3 cup flour, and baking powder; beat until thoroughly blended.
- Pour lemon mixture over hot, baked crust and return to oven. Bake 25-30 minutes or until golden and custard is set.
- Remove from pan and sprinkle with powdered sugar. Cool completely before cutting into squares.
