Chicken Marbella In Clay Pot
- 1 chicken, cut up
- 1/4 head garlic, finely chopped
- 1 tbsp dried oregano
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1/4 cup pitted prunes and dates combo
- 1/4 cup pitted spanish olives
- 1 tbsp capers in juice
- 2 bay leaves
- 1/4 cup brown sugar
- 1/4 cup white wine
- 1/4 cup fresh chopped parsley or cilantro
- 1. combine all ingredients except brown sugar and white wine. marinate overnight.
- 2. soak clay pot while browning chicken.
- 3. add browned chicken and marinade juices to claypot. sprinkle over brown sugar.
- 4. deglaze pan with white wine then our over chicken.
- 5. salt and pepper.
- 6. cook at 425 for 1:15.
