Glissants
- 1 whole chicken cut into parts
- 1 onion diced
- 1 stalk of celery diced
- salt and pepper to taste
- 6 cups of water (or chicken broth)
- 1/4 tsp sage (optional)
- 2 cups of flour
- 1 egg
- salt and pepper
- 1 tsp baking powder
- water
- Place chicken, onion, celery, and salt and pepper in 6 cups water and bring to a boil. Turn down to simmer about 1 hour or until the chicken is almost falling off the bone.
- In the meantime, combine the flour, baking powder, egg, salt, pepper and water to make a slightly firm dough. Flour the table and roll the dough paper thin. Cut into squares. Take the cooked chicken out of the broth and bring the broth to a boil. Drop the dough squares into the boiling broth (in small batches)and cook until they puff up (about 5 minutes) Remove with a slotted spoon and reserve and repeat until desired number reached. Serve with the broth and the chicken. Enjoy!
