Louie'S Cippino
- 1 onion diced
- 1 green pepper diced
- 1 green onion chopped
- 2 cloves garlic chopped
- 2 Tablespoons olive oil
- 14.5 oz can diced tomatoes
- 14 oz can of tomato sauce
- 10 oz bottle clam juice
- 1 cup dry red wine
- 1 cup water
- 1 tsp. oregano
- 1/2 tsp. basil
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tablespoons fresh chopped parsley
- 3/4 pound cod (cut in chunks)
- 1/2 pound sea bass (cut in chunks)
- 3/4 pound small or medium shrimp
- 3/4 pound large scallops (cut in half).
- 12 clams (steam and take out of shell before adding to soup)
- Saute the diced onion, pepper, chopped scallion and garlic in the olive oil. Add the diced tomatoes, tomato sauce, clam juice, red wine, and water. Next add the spices. Stir and simmer for 30 minutes. Then add the fish (cod and sea bass cut into chunks), shrimp, scallops and clams. Bring to simmering and cook another 10-15 minutes.
