White Chili With Chicken (Normal And Slow Cook Recipe)
- One can 14.5 oz fat free chicken broth (or about 3 cups)
- Three cloves minced garlic (or 1.5 tsp of the pre-minced garlic in olive oil)
- Half jar of salsa verde
- One 4.5 oz jar chopped mild green chiles, undrained (use 1/2 can for less spice)
- 1 large can petite cut tomatoes
- 1/2 tsp dried oregano
- 1/4 tsp cumin
- 1/4 tsp pepper
- Two 16 oz cans cannellini or other white beans, drained
- 1 pound boneless, skinless chicken breasts or tenders
- Shredded pepper jack cheese (for topping)
- Regular Prep: Saute chicken in 1 tsp oil. Bring all other ingredients except beans to boil. Reduce heat and simmer 20 min. Shred and add chicken and beans, cooking 5 minutes or until heated.
- Alternate Prep: Put all ingredients in crock pot, cooking on high for 4 hours. Take chicken out and shred. Return chicken, stirring gently.
- Top with cheese, serve.
