Shrimp With Garlic (Gambas/Camarones Al Ajillo)
- 1 lb medium or large shrimp
- 6 garlic cloves, minced
- 1/4 cup dry white wine or sherry
- 1 teaspoon Spanish paprika
- 1/2 cup extra virgin olive oil
- Salt and pepper
- A dash Hot Sauce or pepper flakes (optional)
- 1 lemon for juice to pour when serving
- parsley or chopped cilantro
- Loaf or fresh baguette bread
- In low heat, cook garlic in olive oil until garlic is golden brown (be careful, garlic burns easily!) Raise heat to medium-high and add the shrimp. Add salt and pepper to taste and sprinkle with 1/2 paprika. Flip shrimp over and add salt, pepper and paprika again. (be careful not to add too much salt!)
- Pour the wine over the shrimp and cook until done. Do not over cook!! Add hot sauce or pepper flakes if using any.
- Transfer shrimp to plate. Squeeze lemon juice over shrimp. Sprinkle with parsley or cilantro. Serve the shrimp with fresh warm baguette.
