Nasi
- 2 cups veggies (carrot, broccoli, cabbage, coleslaw jullienned)
- 1 Leek
- 1.5lbs chicken breasts
- 3 Eggs
- Spices:
- 2 tsp Coriander
- 1 tsp Cumin
- 1 tsp Ketjap
- 1 tsp Shrimp paste
- 2 tsp Sambal
- 1 tsp Lemongrass
- 2 tsp Salt
- 1 tsp Palm sugar
- 1 Tbsp Ginger (minced)
- 2 garlic cloves (minced)
- Optional:
- Fried eggs
- Krupuk
- Prepare rice.
- Cut chicken in small blocks. Chop up the leek. Fry (hot) the chicken and the leek quickly until chicken has discoloured on the outside. Throw in 3 eggs and stir-fry. Add the spices and a little water. Reduce temperature to medium. Fry for a little while.
- Add veggies. Stir-fry until veggies are done. Add cooked rice and fry the whole thing on medium for about 5-10 minutes.
- Makes 4, serve with Krupuk and fried eggs.
