Country Apple Prune Cake
- 2 c. sugar
- 3 eggs
- 3 c. flour
- 1 tsp. salt
- 1/2 tsp. ground cloves
- 1 c. chopped nuts
- confectioners sugar
- 1 1/2 c. oil
- 2 c. shredded, peeled apple
- 2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 (12 oz.) pkg. dried pitted prunes, chopped (about 2 c.)
- In a large mixing bowl, beat sugar, oil and eggs for 2 minutes at medium speed.
- Blend in apples.
- Combine dry ingredients and gradually beat into egg mixture.
- Stir in prunes and nuts.
- Spoon into a greased and floured 10-inch tube pan.
- Bake at 325u0b0 for 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean.
- Cool in pan for 15 minutes.
- Invert onto wire rack to cool.
- Just before serving, dust cake with confectioners sugar.
