Cajon Pass Jambalaya (Vegitarian)
- 4 Tbsp olive oil
- 1/2 lb Morningstar vegitarian sausage patties
- 1 med onion, chopped
- 1 med bell pepper, chopped
- 2 celery stalks, diced
- 2 cloves garlic, diced
- 2 cups crushed tomatoes w/puree
- 1 cup diced tomatoes w/ juice
- 1 tbsp cayenne pepper
- 3 tbsp oregano
- 2 green onions, diced
- 2 cups cooked white rice
- Place 2 tbsp olive oil in pan. Place sausage in pan. Cook till brown. Remove sausage with slotted spoon. Add final 2 tbsp olive oil and seasonings, then vegatables (execept green onions, tomatoes, rice) simmer; while simmering, chop sausage and add to veggies. Simmer until onions are beginning to soften. Add tomatoes and bring to a boil. Simmer for about 5 minutes, then remove from heat. Add rice and green onions. Let stand 10 minutes before serving.
