Dirty Rice...With Brown Rice With Ground Turkey, Peppers, And Spices

  1. Bring 2 1/2 cup of chicken stock to a boil in a saucepan, and stir in the brown rice.
  2. Reduce the heat to a simmer, cover, and simmer until the rice is tender and the liquid has been absorbed, 40 to 50 minutes. Set the rice aside.
  3. Dice red and white onion, finely chop cloves of garlic, and slice scallions stir in green bell pepper, onion.
  4. Cook vegetables with 2 tablespoons of olive oil in a large skillet over medium heat.
  5. Add ground turkey into a skillet over medium heat, and cook and stir the turkey until the meat gives up some of its fat, 2 to 3 minutes; Cook and stir until the turkey is crumbly and no longer pink and the vegetables are tender, 5 to 8 more minutes. Stir in the cooked brown rice
  6. Stir in half a bunch of cilantro, finely chopped. Stir in cooked brown rice and adjust seasonings to taste.
  7. A final handful of cilantro brightens the dish and then it's done!
