Black Bean & Corn Salad With Chipotle Honey Vinaigrette
- 2 c. Corn kernels
- 1 c chopped red onion
- 1 can black beans rinsed & drained
- 1 red bell pepper diced
- 1/2 c. Loosely packed chopped cilantro
- 1 -2 avocado diced
- Dressing:
- 1/4 c. + 2 tbsp. Vegetable oil
- 2 tbsp freshly squeezed lime juice
- 2 tbsp. Red wine vinegar
- 2 tbsp honey
- 3/4 tsp cumin
- 1 Clove garlic finely chopped or minced
- 2 chipotle peppers in Adobe sauce chopped
- 1/4 tsp oregano
- Salt and freshly ground pepper
- Mix salad ingredients in large bowl adding avocado last or just before serving.
- Mix dressing ingredients in jar. Shake well.
- Add to sald ingred. a few minutes before serving.
