Tilapia With Citrus Bagna Cauda
- For Sauce
- 1 orange zested and juiced
- 1 lemon zested and juiced
- 8 cherry tomatoes seeded and quartered
- 4 to 6 anchovy fillets smashed into a paste
- 3 cloves garlic
- 8 tablespoons olive oil
- 4 tablespoons butter
- 2 tablespoons fresh basil
- 4 Tilapia fillets
- baby lettuce greens
- Add olive oil and butter to a pan and heat slowly until melted. Add garlic and cook until fragrant. Add anchovy paste and stir until combined and sauce thickens. Add lemon and orange juices and zests. Simmer for 3 minutes and add basil and tomatoes.
- Rub olive oil on tilapia fillets and season with salt and pepper. Cook 2 minutes per side. Serve on a bed of baby lettuce greens and drizzle sauce with tomatoes on top. Enjoy!
