Whole Wheat Vegetarian Persimmon Cookies
- 1/2 cup unsweetened applesauce
- 1/2 cup packed brown sugar (light or dark)
- 2 cups whole wheat flour
- 1/4 teaspoon salt
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon vanilla extract
- 1 and a 1/2 cups persimmon pulp
- 1/4 teaspoon salt
- 1 cup chopped walnuts (toast, if desired)
- 1 to 2 cups semi-sweet chocolate chunks or chips, based on personal taste (can substitute 1 cup raisins or chopped dates)
- Pre-heat oven to 350 degrees F.
- In large bowl, combine applesauce and brown sugar and mix well.
- Sift together the whole-wheat flour, 1/4 teaspoon salt, baking powder, baking soda, cinnamon, nutmeg, and cloves.
- Stir the flour ingredients into the sugar mixture. Add the vanilla extract and mix well. Batter will be thick.
- Stir in the persimmon pulp, 1/4 teaspoon salt, walnuts, and chocolate chunks.
- Drop by tablespoonfuls onto a greased cookie sheet. Bake for approximately 15-17 minutes, until cookies are set and firm around the edges. Transfer immediately to wire rack to cool.
