Whole Wheat Vegetarian Persimmon Cookies

  1. Pre-heat oven to 350 degrees F.
  2. In large bowl, combine applesauce and brown sugar and mix well.
  3. Sift together the whole-wheat flour, 1/4 teaspoon salt, baking powder, baking soda, cinnamon, nutmeg, and cloves.
  4. Stir the flour ingredients into the sugar mixture. Add the vanilla extract and mix well. Batter will be thick.
  5. Stir in the persimmon pulp, 1/4 teaspoon salt, walnuts, and chocolate chunks.
  6. Drop by tablespoonfuls onto a greased cookie sheet. Bake for approximately 15-17 minutes, until cookies are set and firm around the edges. Transfer immediately to wire rack to cool.
