Ridiculously Easy Coconut Lime Pie

  1. Place pie crust in cool oven. Set to 400 degrees. Squeeze limes to produce two tablespoons of juice. Place eggs, flakes, creme of coconut, lime juice, and vanilla in a mixing bowl and stir together well. Remove warming pie crust from oven. Pour bowl's contents into the shell. Place in fully heated oven for 8 minutes. Drop to 350 degrees, but no need to pull the pie out while adjusting the temperature. Bake for an additional 32- 35 minutes, or till set to touch at center. Let cool and top with a bit of whipped cream. Garnish with lime zest. This is a perfect dessert for a summer get-together. Enjoy!
