Ridiculously Easy Coconut Lime Pie
- 1 frozen pie shell
- 3 large eggs
- 1 cup flaked coconut
- 1 cup creme of coconut
- 2 T fresh lime juice
- 1 t vanilla
- whipped creme
- zest from one lime
- Place pie crust in cool oven. Set to 400 degrees. Squeeze limes to produce two tablespoons of juice. Place eggs, flakes, creme of coconut, lime juice, and vanilla in a mixing bowl and stir together well. Remove warming pie crust from oven. Pour bowl's contents into the shell. Place in fully heated oven for 8 minutes. Drop to 350 degrees, but no need to pull the pie out while adjusting the temperature. Bake for an additional 32- 35 minutes, or till set to touch at center. Let cool and top with a bit of whipped cream. Garnish with lime zest. This is a perfect dessert for a summer get-together. Enjoy!
