Brunch Casserole
- 4 c. day-old firm white or French bread
- 2 c. (8 oz.) shredded Cheddar cheese
- 8 eggs, lightly beaten
- 4 c. milk
- 1 tsp. dry mustard
- dash of pepper
- 1 tsp. salt
- 1/2 tsp. instant minced onion
- 8 to 10 slices cooked bacon, crumbled (I use one pound)
- 1 green pepper, sauteed in butter to soften
- 1/4 c. margarine or butter
- Generously butter 9 x 13-inch baking dish.
- Cut or break bread into cubes.
- Spread bread in bottom of dish.
- Cover bread with shredded cheese.
- Beat together eggs, milk, mustard, salt, onion, etc.
- (add crumbled bacon).
- Pour mixture over bread and cheese. Cover and chill at least 12 hours, not more than 24 hours.
- Remove from refrigerator and let stand for 10 minutes.
- Bake in oven at 325u0b0 for 1 hour.
- Serve hot or cool for about 40 minutes and serve.
