Catarina Grilled Pork Chops
- Four 1/2-3/4 inch center cut pork loin chops
- Your favorite grill seasoning to taste
- For the Catarina Marinade:
- 4 ounces dried catarina chiles (guajillo or cascabel may be substituted)
- 8 cloves garlic (pan-roasted)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon Mexican oregano
- 2 teaspoons cilantro
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/2 cup cider vinegar
- Juice of 1 lime
- Prepare the marinade 1 night before you plan to grill the chops.
- 1/2 hour before cooking, remove chops from marinade and discard liquid. Sprinkle chops with desired amount of grill seasoning, to taste. Over medium-low heat, grill chops 12-15 mins. per side, turning once. Enjoy!
- For the marinade:
- Remove stems and seeds from chiles. In a medium pot, bring 4 cups of water to a boil. Remove pot from heat and add chiles. Cover, and leave for 30 mins. Strain chiles after 30 mins.
- Add all marinade ingredients, including the chiles, to a blender or food processor, and blend until smooth. Push mixture through a strainer. Marinate desired meat 12-24 hours.
