Quick Hot Cross Buns
- 2 c. flour
- 1/2 c. sugar
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 3 Tbsp. applesauce
- 3 Tbsp. margarine
- 1/4 c. currants or raisins
- 1 1/4 c. cottage cheese
- 1/4 c. fruit cake mix (candied fruit)
- 1 egg
- 1/2 tsp. vanilla
- 1/2 c. confectioners sugar
- 1/8 tsp. vanilla
- 2 1/2 to 3 tsp. milk
- Combine flour, sugar, baking powder, baking soda, salt and cinnamon.
- Cut in margarine until mixture resembles coarse crumbs. Stir in raisins (or currants) and mixed fruit.
- Combine cottage cheese, egg and 1/2 teaspoon vanilla; beat until almost smooth. Add flour mixture; mix well.
- Knead dough on slightly floured surface 10 times.
- Shape dough into 12 balls.
- Place on greased cookie sheet.
- Bake in a preheated 425u0b0 oven for 18 to 20 minutes, or until toothpick inserted in center comes out clean.
- Cool. When cooled, make glaze by combining confectioners sugar, 1/8 teaspoon vanilla and milk; mix well.
- Make a cross on top of each bun with glaze.
- Serves 12.
